Pancakes With Berries & Mint


There’s probably hundreds of different ways you can eat pancakes and everyone has their favourite. From syrups to butters, to chocolate and ice cream, the possibilities are endless. I’ve tried quite a few varieties myself and I will probably post some of them in the future, but this one is by far my favourite.

While I do use specific brands of flour and protein that may not be available where you live, I have listed the ingredients of these in the notes section so you can find something similar.

These pancakes are served with blueberries, fresh mint, and activated walnuts. They’re packed full of protein, antioxidants, and healthy fats. If you’re looking for a delicious breakfast that will nourish your body and brain and get you ready for the day, then this recipe is for you.

Allergen Info:

Gluten Free
Soy Free
Nut Free Option (Just leave out the walnuts)

The Recipe:

Serves: One (3 pancakes)
Approx 22g Protein per serve.


  • 1/2 cup Gluten free Flour (see notes)
  • 15g Vegan Protein Powder (see notes)
  • 40g Blueberries
  • 19g Activated Walnuts (see notes)
  • 10g Vegan Margarine
  • Fresh Mint


  • Combine flour and protein powder
  • Add water until it forms a pancake consistency
  • Add 1/3 of the nuttelex to a hot pan
  • Add 1/3 of the mixture to pan and cook until golden, then flip and cook until golden
  • Repeat until mixture is used and you have 3 pancakes
  • To make the sauce: blend in a nutribullet or small blender 3/4 of the blueberries, mint, and a dash of water or coconut water if you have it
  • Serve with sauce, leftover blueberries, mint, and walnuts


Amazonia Raw – Protein Isolate (Flavour: Natural)
Ingredients: Organic Sprouted & Fermented Gold Pea Protein, Organic Sprouted Brown Rice Protein, Digestive Enzyme (Bromelain).

Kunara Organics – Organic Gluten Free Flour
Ingredients: Tapioca, Brown Rice flour, Quinoa Flour, Sorghum Flour.

Totally Nuts – Activated Walnuts
Ingredients: Walnuts, Himalayan Crystal Salt (used for activation).

While some prefer to cook their berry sauces, I personally prefer to keep them raw so you’re getting all those extra nutrients that are lost when cooking.
